Ingredients
2 cupFull-fat coconut milk (canned, diluted 1:1 with water)or whole milk
1 tbspFresh turmeric root, gratedor 1 tsp ground turmeric
1 tbspFresh ginger, grated
¼ tspFreshly ground black pepper
1 tspCoconut oil, melted- 1 cupIce, for serving
From your pantry
- ¼ tspGround cinnamon
- 2 tspPure maple syrup
Utensils Microplane · Jar with lid · Whisk · Fine sieve
Instructions

Grate the fresh turmeric and ginger on a microplane. Fresh rhizome is what makes this version worth the wait.

Combine the coconut milk, turmeric, ginger, pepper, coconut oil, maple syrup, and cinnamon in a jar and whisk vigorously. The coconut oil will solidify slightly in the cold milk, which is fine.

Cover and refrigerate for at least 8 hours, ideally 12.

Strain through a fine-mesh sieve into a clean jar.

Shake, then pour over ice in a tall glass. A splash of oat milk foam on top is optional.

Why it works
Curcumin is barely water-soluble, and no study has measured how much a cold overnight infusion extracts; the coconut milk's fat at least gives it somewhere to dissolve. Fresh ginger is richest in gingerols; drying and heating convert part of them to shogaols (Ghasemzadeh et al., 2018), so a cold-brew keeps more of fresh ginger's gingerol content.
Grated fresh turmeric releases turmerones, aromatic compounds in the rhizome's essential oil, which add to the drink's aroma. If you can find fresh rhizomes at an Asian or Indian grocer, the cold-brew is where they show off best.
