Ingredients

From your pantry

  • 1 tspPure maple syrup
  • ½ tspPure vanilla extract

Utensils Fine sieve · Jar with lid · Whisk

Instructions

  1. a spoon stirring a bowl — watercolour illustration

Sift the matcha directly into the jar to prevent clumping. This step is worth the extra minute.

  2. a whisk in a bowl — watercolour illustration

Add a splash of the oat milk and whisk into a smooth paste before adding the rest. Matcha does not disperse well if you add all the liquid at once.

  3. a spoon stirring a bowl — watercolour illustration

Add the remaining oat milk, maple syrup, vanilla, and chia seeds, then whisk for 30 seconds.

  4. a covered bowl standing — watercolour illustration

Wait 10 minutes, then whisk again.

  5. a covered jar chilling — watercolour illustration

    Refrigerate at least 4 hours.

  6. a filled bowl with a spoon — watercolour illustration

Top with strawberry slices before eating.

Why it works

A 2 g teaspoon of matcha delivers roughly 38-88 mg of caffeine (Kochman et al., 2020) and anywhere from under 10 mg to about 90 mg of L-theanine, depending on the product (Unno et al., 2018), an amino acid that increased alpha brain-wave activity at a 50 mg dose in a small EEG study (Nobre et al., Asia Pacific Journal of Clinical Nutrition, 2008, PubMed:18296328), although alpha-wave findings across later studies have been inconsistent (Dashwood et al., 2025). This is the closest thing in the roster to a functional breakfast for people who dislike coffee. Store matcha in an airtight container away from light, heat and air, which dull its color and flavor.
